Steps

  1. Preheat the oven to 350 F.
  2. Parboil the golden potatoes for 10 minutes, then drain well.
  3. Transfer the potatoes to one or two roasting trays and lightly crush them so the oil can soak into the edges.
  4. Drizzle the potatoes with olive oil and toss until well coated.
  5. Peel the carrots if desired, then spread the carrots, olives, and cherry tomatoes evenly around the potatoes.
  6. Separate the garlic heads into cloves, leaving the skins on, and tuck the unpeeled cloves evenly through the trays.
  7. Drizzle everything with the remaining olive oil and balsamic vinegar, then sprinkle with dried thyme, salt, and pepper.
  8. Arrange the sausages evenly on top of the vegetables.
  9. Roast for 20 minutes, then turn the sausages once they are browned on top.
  10. Continue roasting for about 45 minutes, until the vegetables are golden and tender and the sausages are cooked through.
