- Preheat the oven to 350 F.
- Parboil the golden potatoes for 10 minutes, then drain well.
- Transfer the potatoes to one or two roasting trays and lightly crush them so the oil can soak into the edges.
- Drizzle the potatoes with olive oil and toss until well coated.
- Peel the carrots if desired, then spread the carrots, olives, and cherry tomatoes evenly around the potatoes.
- Separate the garlic heads into cloves, leaving the skins on, and tuck the unpeeled cloves evenly through the trays.
- Drizzle everything with the remaining olive oil and balsamic vinegar, then sprinkle with dried thyme, salt, and pepper.
- Arrange the sausages evenly on top of the vegetables.
- Roast for 20 minutes, then turn the sausages once they are browned on top.
- Continue roasting for about 45 minutes, until the vegetables are golden and tender and the sausages are cooked through.
