- In a large bowl, whisk together the flour, sugar (or sweetener), baking powder, baking soda and salt until evenly combined.
- Make a well in the centre of the dry ingredients.
- Add the milk, slightly cooled melted butter, vanilla and egg to the well.
- Use a wire whisk to whisk the wet ingredients together first before slowly folding them into the dry ingredients.
- Gently fold together until just combined and mostly smooth, leaving a few small lumps; the batter should be thick yet pourable.
- If the batter is too thick, fold in a couple tablespoons of extra milk at a time until the desired consistency is reached.
- Set the batter aside and allow it to rest while you heat your pan or griddle.
- Heat a nonstick pan or griddle over low to medium heat and lightly grease with a little butter.
- Pour about 1/4 cup of batter onto the pan and spread gently into a round shape.
- When bubbles form on the surface and the underside is golden, flip with a spatula and cook until the second side is golden and cooked through.
- Repeat with remaining batter and serve warm with your favourite toppings.
